Food Sensitivities, Food Allergies and Autoimmune Disease

The food we’re eating is killing us. If it’s not killing us, it’s at least contributing to chronic conditions including eczema, joint pain, intestinal distress, and anxiety and depression. The fact is the food we eat today is less nutrient dense than a generation or two ago and the pesticides used are more dangerous than ever before. These factors contribute to the food allergies approximately 50 million Americans are suffering at a cost of $18 billion per year. 

What are food allergies and food sensitivities?

When you think of allergies, most of us think of allergies to environmental factors like pollen, grass, dust, and pet dander. Like these allergies, food allergies are the body’s immune system attacking the allergen. In this case, the food we eat.

Food sensitivities are a less toxic reaction to eating certain foods. You may, for example, eat wheat and experience any of these symptoms: vomiting, diarrhea, blood in stool, eczema, hives, skin rashes, wheezing, runny nose, gas, bloating, and mood swings. While you may react in a similar way to foods you’re allergic to, with food allergies, you may also experience acute, toxic reactions like anaphylaxis. That’s a whole body reaction that may include the closing of the throat.

Common food allergies include peanuts, wheat, shellfish, dairy, eggs, and gluten.

Celiac disease is an autoimmune disease in which the small intestine is allergic to gluten which leads to difficulty digesting foods. Gluten contains two proteins that are in many cereal grains, including wheat, here in the US. Lots of processed foods in the US contain gluten and celiac has become almost epidemic. We’ve just processed our wheat to the point that it’s making us sick.

There are cases of Celiac patients who have gone to countries like Italy where they have been able to eat wheat, including pasta. We believe this is due to the low or no levels of pesticides and processing of wheat.

Once allergies or sensitivities are identified, we eliminate those foods from your diet at least for a period of time, for the foods that you’re severely, highly, and moderately allergic. We will rotate healthy foods into your food plan and possibly re-introduce other foods later.
